CREAM OF PARSNIP & TONKA SOUP
with a lightly curried apple & cream

PARMESAN MOUSSE
with a tomato tart, basil pesto, parmesan crisp, rocket leaves

Main Course

STEAMED FILLET OF SEA BASS
with asparagus, saffron new potatoes, seasonal vegetables, scallop (optional) & white wine fish sauce

POACHED & SEARED GUINEA FOWL SUPREME
with a timbale of creamy wild mushrooms, potato rosti, seasonal vegetables, bacon & shallot chicken jus

Dessert

PASSION FRUIT TART
with lychee sorbet, orange & mango salad

CHOCOLATE & PEAR
lightly spiced chocolate mousse, with caramelised pear, almond sponge, pear chantilly, pear sorbet
